View Full Version : Tango Spice Brisket

I was happy with my brisket but I wanted to try a few new things. 1) Hot and fast - overnight cooks are OK once in a while but every weekend get a bit much. 2) I wanted to spice up my brisket for that one taste/bite.
With the help from Tango Spice Company and Shirley Fabrication, I did just that.
I found an 18 pound brisket at Walmart for $2.98/Lb.
I started last night at 10:00, just in case I changed my mind to go low and slow. Jolene can run smooth at low temps and now I know I can do fast. A trimmed 18 pound brisket done in 8 hours. I rested for 3 hours because no one was up at 6 in the morning.
I yo used my usual brisket rub; Kosher salt, course black pepper, lemon pepper, crushed red pepper and my new Spice = Midnight Espresso from Mr Joe Zukes, Tango Spice Company.

I smoked with cherry wood and kept temps up around 270 - 290. I did not wrap until it was done. I wrapped it and rested it for 3 hours.

It was a little over cooked but not bad for my first hot and fast. Everyone in the family loved the Midnight Espresso. Not too hot and just the right amount of kick on the back end. Tango Spice will be part of my recipe moving foward.
