View Full Version : How to stuff a fatty

Hi all...

I have a premium pork patty that I would like to cook up jalapeņo cheddar style for dinner tonight. I have read many of the fatty threads, and see lots of great pictures... but the obvious is eluding me. How should I stuff it? Do people slit it, hollow it out, stuff it and patch it up? I read the flatten in a bag and roll it in, is that a good option?

One I get the goodness in there... should I cook in in or on foil? Straight on the rack? (plan is to smoke in kamado)

Thanks for any suggestions.

This is a perfect reference, thank you! Only think is I don't have bacon. Would I need foil to hold it together or just toss it on?

Putting the pork in a bag and rolling it out helps keep it the shape uniform and it makes it easier to roll. Don't over stuff since it can bust out.

I am with Ron - my preferred fatty is a naked fatty no rub, no nothing. Cook it straight on the grill -no need for foil.

Fatties don't need to be wrapped in bacon, and I have never cooked one on or in foil.
Straight on the grate.

Yeah, I didn't mention the fatty piston because of the timing, but that is probably the best way!

I've been meaning to make one of Cowgirls fatty pistons (stainless version). Just haven't had the time or an opening in a machine.
Someone did a stuffed fatty with blueberry muffing inside that looked amazing.

Mine worked out pretty good. I think the piston is a great idea.
