View Full Version : A Chef Paul Prudhomme inspired cook, blackened redfish and seafood dirty rice

As a memorial, today I cooked a meal using a couple of Chef Paul's recipes.....his blackened redfish and seafood dirty rice.....

The cook started early with a couple different stocks, shrimp (with some crabmeat/shells and redfish trimmings) and his basic stock...... His "basic rice" has about ten different ingredients in it, one being a stock......

i soaked the redfish several hours in ice water per the fishmonger's recommendation.

I made Chef's seasoning rather than using the one you see in the photos....

Chef Paul was very inspiring to me, and it was a pleasure to cook this meal in his honor and memory.

Oh wow! So cool that someone gives a damn about a trailblazer. He was ahead of his time, and opened the door for the "celebrity" chef world. So much personality, and the cooking chops to match. Awesome cook, and cheers to you for posting this.

plan redfish trip soon. I live in Tampa,Fl so a flats fishing excursion is now on the calendar.. will also have to get some mullett to smoke as well.

Brother i have that same book. I actually got it signed by Paul. He was a guest speaker at a convention my wife had to attend when she was in dental school. I attended the convention as well so i could meet him. He was a really nice down to earth guy. He will be missed. Awesome tribute to brother Paul. Great looking grub for sure my friend:thumb:

Brother i see that you are from Biloxi. Im from just down the road in Saucier about 15 minutes away. Im currently offshore on the Kodiak Deepwater Project but i will be home around the holidays. I usually cook a whole hog and a goat as well as a ton of shrimp for New Years. You should come by if you can. It would be great to meet you.

I don't eat seafood but" that looks so clean and a fresh pleasing looking cook.

That looks like a fine meal. Chef Paul will be sorely missed. He is one of the biggest reasons that I started cooking. That is a fine book. The meatloaf is the best I have ever had and everyone that tries it says the same. R.I.P. Chef Paul.

That's a great tribute. I grew up in New Orleans and many many years ago I remember seeing Chef Paul on the Midday Show. That sparked my first interest in cooking. That is also a great cook book, I've enjoyed many fine dishes from it. Thanks for posting your Chef Paul cook.

Great looking cook and a great tribute. I have that same book and have cooked many recipes from it. Still love the basic rice recipe. Chef Paul would be pleased.

Authentic Cajun cooking is a labor of love for sure. You did him proud with that cook.

That was the first cook book I ever purchased. He was a big influence in my love for cooking. He was a great personality and will be missed. R.I.P. Chef Paul.
