Bout to kick off an overnight cook which will be my first brisket cook on the new LSG. Making briskets for myself and various friends and family, wanted to load it up to get practice on a big cook before I have a bunch of people over for a party for TAMU/Ole Miss in a few weeks.

Prime briskets down to $3.19 at Costco now!!! Friend of a friend works at Cargill and does beef futures, said we can expect sub-$2 prices for choice brisket at Walmart/HEB... Wahoo!

Anyway, no pron yet, but this was my Costco cart earlier.

Are those ribs enhanced? The Costco where I am only has enhanced ribs that are that color and they have burned me too many times.

Are those ribs enhanced? The Costco where I am only has enhanced ribs that are that color and they have burned me too many times.

Melissa, pretty sure they are not enhanced... label says "Natural" and I've used these for years and had good results. Ones I get at Kroger are always weird, but Costco and my butcher usually not enhanced.

I'm gunning for both! Based on the Bama/Arky game today, things feel promising. I wanted Bama to come in to Kyle Field bent but not broken.

I've never seen enhanced ribs at a Costco... Always enhanced at Kroger I believe.

Those are some really nice lookin briskets... Excited to see the cook.

Offloaded the briskets to wrap and rest in the cooler till the Cowboys game. Still gotta do the ribs but I've run low on fuel and don't have time to reload at the moment so the ribs will go on later this afternoon while the cookers still hot. Didn't wrap, so they have a real dark bark, but I like em like that. This was like trying to juggle jello, soooo moist.

That pan contains the drippings from all four... I have almost a gallon of drippings!!!

Always have been. I always felt on my UDS that fat protected it from the direct heat. Might have to experiment now that I'm not cookin over direct fire.

Well, somehow failed to take pictures during the cut, but here's the big one after I pulled it out. It was moist to say the least.

Trimmed and packaged three for the aforementioned friends and family. Those were all seasoned with Meatchurch Holy Cow.

Mine was rubbed with Black Ops. Saved a pound of the flat to freeze for chili, sliced up the rest for those of us hanging at my house. Great stuff. Overall pretty happy with the results here. I really need to invest in some butcher paper, I think the color on these was a bit darker than I wanted. Flavor was great, but they definitely ended up a bit black.

Anywho, plated up with some beans, slaw and mac, and a good classic Oktoberfest! Thanks for lookin!

Your cooks and talking to Chris have pushed me over the edge in my decision of what my next cooker is gonna be. Unless someone puts their Shirley patio up for sale at say around half price I will be ordering the LSG cabinet.

I had water for the first couple hours, then I went to bed and stopped checking. I didn't fill the whole pan and it was definitely dry in the morning. Temps held with ZERO tinkering from 10 pm to 10 am. Settled in all by itself at 250 with the valve and stack set to Chris' recommendation of about 1/4 open. Started to climb a little in the morning cause I was opening and closing the door shuffling meats around, so I think I will be better next time about pre-empting my door openings with airflow adjustments.

Your cooks and talking to Chris have pushed me over the edge in my decision of what my next cooker is gonna be. Unless someone puts their Shirley patio up for sale at say around half price I will be ordering the LSG cabinet.

Do it! I really want a Shirley too :shocked: cause I want to play with a stickburner buttttt one thing at a time.
