Made pizza Friday. Changed from my usual recipe to trying no knead recipe.

Put brisket on at 9:15 pulled off at 3:45 and rested.
Not sure how the point and flat turned while cooking. You can see in the one pic. This was my best brisket yet. The flat was by far best flat I ever had.

Fine looking cook. Now I want some of that brisket on a pizza.

What did you think of the moisture/tenderness of that brisket? Looks perfect to me...

It was the most moist and tender brisket I made to date. Guess I pulled off at the right time.
