View Full Version : Keith does know L&S(for me) ribs ... Lots of pRon

Did some skinny St Louis rack ...or mostly tips on the roti while doing some (not sure what to call it) peppers. Ribs only cooked about 250* 300* for a couple hours...really thin. Was at the Mexican market today and picked up some ultra hot japs, queso quesadilla, chorizo, and queso chihuahua.

First was smoking the chorizo to around 150* then loaded the jalapenos with the meat and cheeses. Both the ribs and the peppers cooked with a oak and maple splits..... peppers way yummy but SPICY!!! I forgot how hot the good jalapenos were!

Ribs had a Jamaican all purpose rub and finished with a AC vinegar based bbq glaze with apple butter in it. Wow that was a tasty glaze... Thanks for looking!

They were juicy and nice SR but I think the sun blocked it.

Bob the cheeses were FANTASTIC! ...and heh being within 50* average temp with this cooker for a long cook is like with in 3-5* for others. lol

Keith everything looks really tasty man. Nice work. Doesn't matter if your driving a sports car or a Honda Civic as long as it gets you to the party!

Bold move to keep the membranes and seeds in those Jalapeņos... That's like Russian roulette with heat!

The Jerk rub and AC/Apple Butter glazed ribs look divine.

The Jerk rub and AC/Apple Butter glazed ribs look divine. Thanks! I took a good portion of the seeds but what was left was way spicy. Some jalapenos are weak, i'm glad i went to the Mexican grocery for the good ones.

Dude. I don't care the cook speed. That's some fine looking bones and ABTs! :thumb:Thanks Mike! Hey I gotta say I think I'm pretty much done with cream cheese in ABT's. That Mex cheese filling and chorizo is way tastier too me. Any kind of sausage mix would be good i think. I've never eaten more ABT's! This is crazy to me. lol

Thanks! ...and y'all need to try these kinda peppers, sooo good. The apple butter in the glaze is a mainstay now too.
