I'm heading to the Mexican market soon and one of the things i need is a "melting cheese". What was the name of the best kind? I really like the white queso the mexican restaurants put over things like chimi's and burritos.

Am I on the right track with these?

I buy Cacique brand Oaxaca, Quesadillo and Asadero, all good

I have heard from cheese makers, that Oaxaca and Jack cheese are actually the same cheese with different names

I like chihuahua for melting. Do they bark much before they get cooked? :becky: LOL, seriously I've never heard of chihuahua cheese either...thought they were only dogs.

it's a small cheese, with a big flavor, annoying though

All above mentioned are great melters. I've heard a lot of the Mexican restaurants actually use land o lakes white American. Pretty much same melting properties, and mild taste like the Mexican counterparts.

land o lakes white American is what we have used a few times. had to get it from the deli counter and have them slice it thin.

I picked up some chihuahua an quesadillo cheese and am impressed. Used mostly quesadillo and it melts great and really good flavor!
