Throwing 2 luscious butts on the smokemaster at 8am for a 8 hour cook. They were 1.59 a lb so I'm hopeful that they are cheap AND easy.

Going with a more Texas style, pepper, salt, garlic powder, onion powder, and trying some pure course cane sugar for a nice bark.

Let the games begin.

Starting with a couple pieces of oak and apple, then just apple.

one hour in.

I had the butt out for about 30 minutes for rub while I got the smoker up to temp.

starting temp was 59 degrees.

one hour in at 99 degrees. holding smoker at 250 +/- 20 degrees

10:00 am...butts are at 136 degrees, temp probe thru exhaust.

spritz will be apple juice with some more pure cane sugar dissolved in it add to the bark.
I have a LOT of pepper (cuz that's how I roll) on these so I'm gonna balance with some sweet.

11:00 am and the butts are at 154 degrees. moving right along. They are between 7 and 8 pounds each.

12:00 pm, butts at 167. They came off like a prom dress, and got wrapped in foil, then back on.

1:00pm, butts at 181. maintaining the same pit temp as I'm right on time.

I Picked this smokemaster up a Craigslist list a month ago, drove clear across the state to get it. Found it was lightly used, maybe 5 cooks on it. Extremely happy to have found it and love it.
Got it from a fellow brethren at an extremely good price (thanks Scott).

Just caught one of my neighbors licking my windows. Jealous bastard.....sweet bbq smoke draws em like flies.

Looks great so far man.. It's making my mouth water. How often do you spritz them with the Apple Juice ?

2:00pm temp as 198.

Gonna pull them in a minute and put them in a cooler wrapped up.

On the spritzing....just a couple times, more if I get a temp spike and I'm cooling it down. This time was 3 spritzes and a good blast when I wrapped them. Nothing in the first 3.5 hours though.

Pulled after a 2.5 hour rest in the cooler, still at 175 degrees when pulled. Excellent flavor.

Since Mr. Burnett gave me my start building smokers I like to find out as much as I can about his smokers. Where they came from, how long they've been in use, current issues, likes and dislikes etc. It all helps me and Big Hat build a better smoker for the new generation. Shoot me a photo or two if you get a chance. Thanks Beau Smith
