View Full Version : Advice needed. First big cook coming up.

hey everyone... I've been asked to cook enough butt to feed approximately 100 people at a tailgate party at a nearby university. I figured each sandwich would have at least 4 oz. of meat, but no more than 6oz. and that I should get about 30-35lbs of boneless butt. Does that sound about right?

not that it really matters, but there will be other food, such as cole slaw and chips and pickles.

The most I've ever cooked was enough to feed about 35 folks. I'm thinking I might be in over my head. but I'm not panicking yet. anyone care to chime in?

Assuming 5 ounces per sandwich, 100 portions, you need 500 ounces of cooked meat. That's 31 pounds finished product. Boneless butts yield around 60%. I think you need to start with 55 pounds of raw butts

I would agree with that estimate (50-55 lb.) as the sole protein

Sounds about like a case of butts. I get a better price buying by the case and it is usually 65-70 lbs.

I always figure 1 lb raw per person some folks eat more.

I also would say around 50+lbs. However, I would suggest bone-in butts. They hold together and don't flop around. I find boneless annoying.

There are a few calculators in the catering section of the forum. Most people don't go there.

Yeah around 60lbs should easily get you there. If all you are doing is butts don't sweat it. It's when you are doing 3 meats and multiple sides for that many that slightly complicates things.

thanks, everyone. I appreciate all the input. So I've got butts to do. Now i'm being told they want poppers. I told the folks I don't do poppers. ABTs and Armadillo eggs, absolutely. But never a popper on my cooker...

they want to sell plates with abts, 5 for 2.50. I told them they were crazy.

I'm looking forward to doing it. Gonna try and convince them to go up on the price of the abts. I think folks will be more than happy to pay more for these suckers...
