So the beef rib TD is going on and I had this plate in the freezer so I decided to take it out get it rolling.

When I asked the butcher at the store for them he took off a bunch of the fat cap without me asking.

On to the Akorn at 275 with some royal oak and hickory chunks.

After about 3 hours there was the big foot siting!

I thought corn muffins would go well with the ribs so my helper and I whipped some up!

Check again around 5 hours and some spots were probing tender but the thick parts still felt a little resistance.

I got good bark but I think I could've went heavier on the rub. It was my first time using the Black Ops and I dig it and wanted more. Thanks for checking it out!

Ding Ding Ding!!!!! That is awesome! As far as the Black Ops and I think most Oak Ridge rubs, they are not very salty but very complex and you can always bump salt and pepper to taste. Again good job.

Im a fan of black ops undercoat and coarse salt and pepper topcoat.

As for not enough rub i tend to be careful with application on ribs as their is so much bark per meat.

Ha so true. You don't even get a chance to fill the pans before they are trying to sneak a taste.

Thanks man! The muffins turned out great. I did the opposite hot sauce salt then pepper than black ops. Maybe will reverse next time.

If your grocery store sells short ribs already cut, ask them if they can give you the whole plate not trimmed or cut. They don't sell them here at most stores besides butcher shops and resturant depot so I just asked the butcher at my local shop rite.
