here are similarities. Shoulder fat cap removed, seasoning coarse black pepper and kosher salt, water pan, pecan chunks for smoke.

That's probably about it. No spritzing etc. I did not spritz yesterday's brisket and it was home run quality. Not using an offset but the Primo XL. Easy to dial in 275

Ribs were already in half in package

3 or so hours in. Ribs are wrapped tight pork shoulder with fat cap removed looking great.

My wife keeps calling friends proclaiming"he's figured it out, I'll bring you some". So far today I've had a piece of toast with hemp oil (health food store legal kind) and a guacamole Guadalajara from Taco Villa. Just finished bike ride may have to take her to golf course so I can get a hot dog from the beer cart lady.

Wow. Had BBQ Royalty dine with bride and me on the patio tonight. Home FREAKN run. The maker owner of the SOB line of cookers liked and there was nothing left. Cloud nine. I may sell all my cookers and take up tennis. I've hit the peak.


Ok I'm not going anywhere. I just paid for another year BBQ Bretheren membership this morning.

Shoulder off the Primo at 196. Wrapped in foil then wrapped in towel and into cooler for two hours. Bones (3) slid out like a knife thru water. Pulled and stored. Juicy and tender with great peppery bark pieces.

Thanks everyone for looking was a great day. Liver took the worst of it. 7 beers and JDaniel Amen.
