Well, decided to go ahead and see what all the fuss is about with beef short ribs, central Texas style. The players:
Worcestershire (however the fark you spell it) sauce
Fresh coarse ground cracked black pepper
Fresh ground coarse kosher salt
UDS with water pan
Kingsford
5 hickory chunks
Temp 225-250
I must say, I was skeptical about beef shorties. Now I'm a believer! They were delicious! Thanks to all you BBQ Brethren for pointing me in the direction of beef ribs!

Thoase look like back ribs, not short ribs although i could be wrong. A lot of people prefer short ribs because they have more meat on them and a lot of times back ribs are mostly bones without much meat. Personally i prefer the flavor of Beef Back ribs over short ribs and ocassionaly my local grocery store will have some back ribs with a decent amount of meat left on em....if they do, i always scoop them up. Probably my favorite thing to eat BBQ wise are some back ribs. Nice Cook!

You're right! I had my ribs mixed up. Still trying to learn the different cuts of beef ribs. Thanks!
