Anyone know how long it'll take to smoke turkey legs, I am taking my cooker to all the Michigan home games for tailgating and I'm trying to think of easy things to do.

I smoke turkey legs for my children's school fair. The only ones that I can get locally are HUGE. Like 28-32 oz huge. I have tried Restaurant Depot, Sysco, etc. nobody seems to be able to source smaller ones (16-24 oz).

That said, the kids LOVE having a Flintstones-style brontosaurus leg.

I cook them at 275-300. I make a thin baste with chicken stock, BBQ sauce, and Worcestershire. I baste them every 20 min and start temping them after about 90 min.

Being poultry and that I'm serving kids, I want to see a min of 170 on my Thermopen. If I were cooking for adults, I might go 165. I wrap them in foil as I pull them and keep them warm in a cooler. The foil serves as a handle when it's time to eat.
