View Full Version : Best Hot Smoked Bacon method **maybe a good link on the site**

I have been researching making bacon and know I will do the hot method because I am not equipped to do cold smoke. There are so many different cures is there one go to that many Brethren like? Process used from beginning through curing to cooking? Also, do you season again after curing with something maybe just like pepper on the outside?

I start with my favourite rub and add a teaspoon of pink cure, sprinkle it over the pork belly and then leave it curing for a week or so then smoke until the IT reaches 150f. Sometimes I'll add some extra rub to the pork before putting it on to smoke.
