View Full Version : Shrimp and Grits - inspired by Cowgirl

I used this contest as a motivation to make something that I have never cooked (heck, never even eaten) before - Shrimp and Grits. My inspiration came from this cook thread http://www.bbq-brethren.com/forum/showthread.php?t=195418&highlight=shrimp

To start, I made some grits seasoned with Johnny's Garlic Spread, and stirred in a few handfuls of shredded cheddar

Got a cast iron skillet super hot, and melted garlic butter in some olive oil. Cooked down a sweet onion with bell pepper. Seasoned with Cucamonga Cattle Company Prairie Dust and Oakridge Crucible Rub, also incorporated some of my homemade bbq sauce and freshly squeezed lemon juice.

After the veggies cooked down, removed them from the pan. Cooked down 1lb of bacon, and reserved some of the grease

Removed the 16/20 shrimp from a marinade of olive oil, lemon juice and Prairie Dust. Quickly seared them in some of the reserved bacon grease. After the shrimp were cooked, they were removed from the pan. Added the remaining marinade and stirred in the veggies. Adjusted the seasoning with some worcestershire and additional black pepper.

Time to eat.

Although I had nothing to compare it to, I really enjoyed this meal. The Prairie Dust is very herb-forward, and the Crucible Rub gives a wonderfully deep heat. The richness from the grits was balanced by the acidity from the lemon juice.

I've never had grits, been wanting to try them.
