Finally broke out the 22" WSM that I bought in March or so...I quickly made all the mods: Cajun Bandit charcoal ring, extension, door, latch, Unknown BBQ lid-holder and finally some casters. Then I got busy and I never had the opportunity to use it...

My in-laws have a 50th Wedding Anniversary dinner next weekend and I have been asked to cook for about 50 people for the pre-party the day before. I have close to 30 lbs. of pulled pork that I will be reheating that day to go with about 20 lbs. of brisket. There will be plenty of left-overs of each!

What's the extension piece that you are talking about?

How do you like the door and latch? I've been thinking about the door myself

Dang 93! That's like leaving a 56 Chevy in the garage after you've restored it! Good looking mods and food!

Thanks all, the color is from the OakRidge Dominator rib rub that is my go-to for Butts. I really like the flavor and the smell when prepping.

The extension is a ring similar to a rotisserie ring that adds another rack level...I didn't need it today. It is stainless and well built. It will take a lot of meat to fill up the two racks already available on the WSM. (I may not need it, but I do have it...) :-D

The door and latch worked perfectly, no seeping smoke and securely attached. I had to add some coals mid-cook and while the latch was hot, it was easy to maneuver.

Thanks Toast-No 56 Chevy, but I am working on a 93 Chevy 1500 that we call the "Turd." I'll have to post pics in WP.

Thanks Keith! Yes, they were the Meijer butts...I had to snatch a sample and they were very good, nice porky flavor! Wish I had a few more too.
