So I smoked up six racks of spare ribs cut St. Louis style from Southside Market in Elgin on my WSM. Then I made a swine apple. The swineapple is stuffed with country-style ribs that were rubbed in rib rub and coated with my glaze (more on that later). These were smoked on my Weber Kettle 22 because the WSM was full of ribs. My glaze on the bacon, around the side of the pineapple and around the side of the country-style ribs was maple syrup mixed with HEB Memphis BBQ sauce, some cayenne pepper and about a shot of Maker's Mark. I left the ribs on a little long but they were still amazing. It was glorious.

Thanks. I cooked swine apple a while back and it over-tenderized the meat. This time around I tossed the unloaded pineapples in the oven for 30 minutes to burn off some of that enzyme before loading it up and prepping it for the smoker. Turned out better this time.

Thanks. Cooked for 18 people. First time cooking for more than eight. Definitely puts yours skills to the test.

Man I've seen that stuffed pineapple thing here too many times now! Gotta try it soon.
