View Full Version : First time pulled lamb on UDS

Should I use a diffuser with drip pan or not? I usually don't use either but I thought since lamb has a lot of fat, it might be a good idea.
I plan on 225-275 for about 10 hrs. Any thoughts?

If you use a drip pan, you won't need a diffuser.

I used a drip pan.

What cut are you smoking? 10 hours at that temp might create lamb jerky

I'm doing a bone in shoulder. When I say 10 hrs I'm giving myself some leeway.
4-5 hrs till probe tender then, according to one of Aussies Titch, 2 hrs foiled. Plus a couple of hours in the cooler.

2 1/2 hrs in, about 147 degrees, not quit probe tender yet. I wish you could smell this thing!

Sorry for the long delay in posting. had trouble post pictures last night.
Sooo, had trouble keeping the drum under 300*! It ran at 280-300* for about 2hrs before I finally got it to settle in at 225-250.
2 more hrs at 225-250*, internal temp 180*, wrapped in foil, back in drum until 203* IT.
Wrapped the little lamb in a towel and put in cooler until dinner.
Not bad for first time!!

Wow, I have never seen lamb get to the pull point. Awesome job!
