I'm pretty stoked that I made one of these bad boys. It didn't come out like super tender, but it did have some parts that were tender. Overall I was really happy. I cooked it for 7 hours. It was a 5 1/2lb flat brisket. I feel next time will be better. I was really nervous about messing it up. This is also one of my first YouTube videos. https://youtu.be/Z3k9Z-Nzcro

That's a single person Texas serving you got there, What did everyone else eat??:-P Looks like it could have gone longer the slices look tight to me.

These are the only reliable methods to indicate the proper time to declare the cook completed with success.
