I was just gifted this bottle of smoked Spanish olive oil. What does one do with smoked olive oil? I've never had the stuff before and don't know what it's good for. . . .

If it is any good, and I hope it is, then I would bake a loaf of yummy bread. I'd pour some of that on a plate and eat the bread piece by piece, dipping it into the olive oil.

I second Gore.

Add some Manchego cheese

Don't cook with it, I'd use it as a finishing oil for bread or grilled meats

Or you could make a simple vinaigrette with it. I love dipping fresh greens into flavorful olive oil and vinegar

yep, or drizzle as a finish on a grilled steak or veggies... Or maybe even a finish on seafood pasta

All of the above.
It is a finishing product, do not cook with it.
It makes a nice pesto, nice hummus and a cracker dressing for grilled mandarin salad with blue cheese.

I am not recommending to anyone that smoking olive oil is worth it. IMO it isn't.
Just something different.
