Who has done steaks on the griddle? How ya like it?

You can cook a steak on a griddle same as a CI pan. They are good if cooked correctly but it is hard to beat a flame kissed steak.

I have, on the blackstone. they turn out good. I cook them under a dome, they turn out super juicy.

Get the griddle as hot as you can and dry the steaks off. Might even dust each side with a bit of corn starch.

I have tried filets and ribeyes on a CI skillet. Loved the filets, disappointed in the ribeyes, so grill only for ribeyes from now on.

I like best of both worlds using reverse sear. Let the steaks catch a little smoke for a while to about 120, then onto a griddle or CI pan for the sear. Doing that tonight with a few ribeyes tonight and really looking forward to it.
