I was at HEB Saturday, one of the bigger ones a little further from my home. As usual, I had to look through the big meat section just in case something jumps out at me and something did. A 16 pound Prime Brisket. When I picked it up, the first thing I noticed was how floppy and thick it was, nice marbling, the works. Then I noticed the price. $3.37 a pound, which was $2.10 a pound less then the last one I found that is all snug in my freezer.
The last thing I noticed was that someone must have thrown the brisket on one of the dividing racks in the cooler and pierced the cryovac, cause I had blood on my hands. But damn, this was a nice piece of meat. The meat still was bright red and there was no off smell to the blood on my hand, so I took it to the counter to see if they could reseal it for me. They didn't have anything big enough to seal it, brought me a couple of other primes that just weren't in the same quality as this one, so I said to hell with it, double bagged it and took it home.
My plan was to take it out of the bag, rinse it off, and then reseal it with my Foodsaver. The wife and I fought for several minutes before realizing this thing just wasn't going to fit in my large bags. I didn't have time to cook it this weekend, so some aggressive trimming of the hard fat and slimming down the fat cap like I normally would before rubbing and it barely fit into a bag.
The only thing I forgot to do was ask them if they would mark it down. :doh: Oh well, now I have two primes in the freezer and the Labor Day weekend coming up. I know what I will be cooking...
