View Full Version : First Baby Back Cook on UDS

Did my first real cook on the new UDS today. Was having some people over so we decided to go with a few racks of baby back ribs. I cooked ribs one other time in an electric smoker and tried the 2-2-1 technique. Those ribs turned out okay but in my opinion were way over cooked (fall off the bone and out of the foil.)

So this time I was going to go with no foil...

I started by pulling the membrane, dusting with rub, wrapping in cellophane and into the fridge overnight. I pulled them from the fridge, unwrapped and lightly dusted with some more rub about an hour before putting on the smoker.

I let the smoker come up to temp for about an hour and then it was time to get the ribs on. Of course I had a helper, who was more than willing to perform "clean-up" duty!

I put the ribs on, two racks on the top and one on the lower rack.

For the next three hours I resisted the temptation to peek and kept the temps between 230-240. I opened up the UDS after 3 hours and the ribs seemed tender and the bend test was just about there. I decided to basted with some BBQ sauce and leave on for a bit longer.

Company showed up...and we got a bit distracted so the ribs stayed on for an hour with the sauce (I was only planning on 30 min...)

The final product...the rack on the lower grate were more done then the two on the upper rack. Which was perfect because one of our guest preferred them more done. The top two racks were spot on for doneness in my opinion.

I am glad I resisted the foil as this made for a way easier cook and the end result was top notch - wouldnt have dared it without this board, so thank-you all!

Biggest ribs I ever did see. And they do look tasty. Nice maiden voyage.
