View Full Version : Cooking direct with wsm?

does anyone use their wsm with no water pan/heat shield? I'm talking food on the top grate with nothing between the food and the coals except distance. Was thinking this may work pretty well for certain meats like chicken or certain cuts of beef and pork.

Don't have the WSM but no different in the UDS or my WSM mini that's the 18.5" size....Yes you can and it's great! Grilling from a distance

I do it often for chicken, turkey, wings, and other small cuts of beef.

Works with the PBC so should work with WSM

I've done it for chicken and fire roasting peppers. Ive even set a grate directly over coals. Be careful with temps as too much heat starts to jack with your seasoning. I about had a melt down a week ago when the wife about ruined my seasoning after roasting some peppers. All is okay though, just began to bubble up with no scorching.

They also make a rack for the WSM for hanging meat directly over the coals. Then we can be just like the PBC Bigboys. :becky:

It works well either with a hanging rack or grill grate.
The flavor of the food is great.

Made a pork loin last night direct over apple wood. 350-450 the whole way and turned out great.

Got what Toast posted, works great, I will normally use a little smaller fire basket to be able to fill it properly (expanded metal, home made, very ugly)
