A couple of weeks ago, our local Costco started carrying pork belly. When I saw it, I said to myself "Self, that's what they make bacon out of."

I had just found some pink salt at a local ranch store, and I had the rest of the stuff, so I bought an eight pound pork belly to try my hand at bacon making.

Here's the process in photos...

2 - Subdivided for easier handling

3. The cure -

1 cup brown sugar
1/2 cup sea salt
2 tsp granulated onion
2 tsp granulated garlic
2 tsp mustard powder
scant 2 tsp Prague powder (Cure #1)

4 - Rubbed

5 - Headed for the refrigerator for a ten day cure

6 - Pre-smoke fry - fries like bacon, looks like bacon, almost tastes like bacon...

7 - Post-cure, peppered four pounds, left the rest alone. Bacmk into the refrigerator for a day of drying...

8 - Into the smoke box with hickory and apple smoke to cold smoke for about ten hours.

Was at Costco today, didn't see any. I'll be there again mid week, I'll look for it.
I'd like to try bacon, your looks great!

What type of internal temp do you take it too?

Not very high. The warmest my smoker got was about 104.

Gotta learn to cook bacon again. This homemade stuff doesn't cook like the store bought kind.
