View Full Version : Pork Butt Wrapped with Maple Syrup

Too damn hot to do any serious cooking, but WinCo had butts on sale for $0.88/lb. Found a nice 7.6 lb one and let it roll all day yesterday in the mini (that thing is a hot weather small cook savior). I don't normally wrap mid cook, but I was playing with a new rub that was a bit less sweet than I normally use on pork. To counter the rub, I wrapped at 6 hours (165 degrees) with some dark amber maple syrup. Pulled at 8 hours. Between the syrup and the liquid from the pork, there was a nice thin sauce in the foil to add to the pulled pork.

Looks good from here! I was just telling the wife that I will probably be cooking on the mini or jimmy until the temps go back down to double digits so I can feel your pain.

Funny, the aroma was far stringer than the taste. My oldest son said it smelled like breakfast LOL. The taste and thickness of the sauce was spot on though. I have wrapped with honey and brown sugar plenty of times. I liked this a lot better. It was sweet but not overpowering. What it did best was crutch the leftovers and add another layer of flavor and moisture with no added oil from straight drippings.

I used the Kroger Private Selection (the same stuff we used for the pig candy at the bash). Really decent quality for the price.

It looks good! Private Select is a pretty good store brand! I like the maple syrup and the Kona coffee.
