View Full Version : I need a good chicken rub.

I'm going to smoke some chicken thighs for my dad tomorrow. I don't usually do chicken and I want a tasty homemade rub. I'd love to by one, but up here in New England, we have crap for rubs.

Anyone have a good chicken rub recipe or a link to a good one?

3/4 cup paprika
1/4 cup freshly ground pepper
1/4 celery salt
1/4 cup sugar
2 tablespoons onion powder
2 tablespoons dry mustard
2 teaspoons cayenne
Zest of 3 to 4 lemons dried and minced

From Smoke & Spice. I Recommend it highly.

BBQ Chicken Rub
Morton salt Co

Ingredients
4 Tbsp Morton ® Kosher Salt
1 Tbsp Ground Black Pepper
1 Tbsp Garlic Powder
˝ tsp Cayenne Pepper
2 Tbsp Brown Sugar
3 Tbsp Paprika
1 Tbsp Chili Powder
Directions MIX all ingredients in a bowl.
RUB seasoning onto meat, 2-3 Tablespoons per pound of chicken or as desired.
BAKE, BROIL or GRILL as preferred.
STORE remaining rub mixture in airtight container.

Makes about ˝ cup

That sounds like a winner on chicken! I would be tempted to a add 1/2 to 1 tbsp of crushed Rosemary as it goes awesome with poultry

Thanks guys! I'm going to try both, I have 8 thighs. Neither are really spicy right? My dad hates heat… the 2 Tablespoons of cayenne with 2 Tablespoons of mustard sounds pretty spicy...

It's pretty much brine overnight, rub, and then sauce 2/3rds of the way through for chicken right?

You and me both. I would try and locate some fresh rosemary, fresh garlic, shallot onions, pepper corns, lemon and some gourmet butter. Melt the butter in a pan add all of herbs a little of the rub. Low simmer everything for about 15 minutes. Strain it and let it cool. Can now use as a basting liquid or injection.

If pop is sensitive to heat, drop the cayenne from the recipe. Here are two of my choices off the shelf for chicken:

This is the only one I mix up.
Greek Seasoning Blend

Ingredients: 16 tsp

2 teaspoons salt
1 teaspoon basil
1 tsp sage
1 tsp oregano
1/2 teaspoon thyme
1 1/2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon dill
1 teaspoon marjoram
1 teaspoon cornstarch
1 teaspoon pepper
1 teaspoon dried parsley flakes
1 teaspoon rosemary
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg


Directions:

Combine all ingredients in blender, grind to a fine powder, and store in an airtight container.

Ken’s basic BBQ rub recipe.

2 ancho chili powder (not hot)
3 garlic powder
1 cumin (ground cumin seed)
1 chipotle powder
1 black pepper
(optional – 1 celery seed)

I know that I'm going to get flamed for this, but when I don't feel like making a rub, I use Lowry's seasoned salt on poultry. I love the stuff.
