View Full Version : Brinkmann Cimarron Smoker Restorition Project

I just picked up a old Brinkmann Cimarron Smoker and will be bringing it back to a new and improved condition . this is 1/4 steel and heavy duty as they come and wish the new ones were still made this way . I will be posting pics in its current condition and will be showing the mods I will be doing to it to make it a efficient cooking machine and post pics of the restore progress .

current condition is pretty dang good .

The current condition looks better then a lot of cookers in use now.

It looks to be in pretty darned good shape and a nice find! The old saying of "They don't make them like they used to" sure applies to most smokers these days

I even found another one for $100 but it needs a lot more work .

The guys at Smokerbuilder.com and BBQ Smoker Supply are making some pretty cool Reverse Flow and aftermarket items for these types of offset smokers.

It was unfortunate I wasn't aware of them when I was into rehabbing the Bandera an NBBD.

that's the exact same one I have for my little smoker!!! I will be looking forward to seeing what you do with it, especially any mods.

got it burned out tonight and was real easy to get it to 400 degrees with four chunks of wood . when I buy a used smoker I liked to burn all the seasoning out and start over and get it seasoned with what I cook with , you never know what people cook now of days , lol . going to start tomorrow on sanding and getting the old paint off and I am going to try and get it done by this weekend if my metal guy can get the tuning plates cut .

Good luck man!! The smoker looks pretty darn good as is if you ask me. BTW, my tuning plates were just the 4*8 inch weld stick Lowes had. I shaved them down a tad because the ends had paint on them but they are still basically 4*8.

Can't wait to see the first cook!! I'm throwing 3 racks of ribs and two pork butts on mine this weekend for a BBQ bash! Gonna be fun to get her fired up stuffed full of meat!

I got the tuning plates being cut by my local metal dude but he will not have them ready till Monday so I worked on getting the smoker ready to paint . this thing needed a lot of sanding and grinding with a rust stripper wheel but after 6 hours of work it is almost ready to be painted and plan on doing it tomorrow as long as the weather holds out .

Grats- that's one bad boy. I keep watching CL a backyard offset- but most everything is Chinese paper thin/rusted thru (but "still really in good shape"). One day maybe.

Damn nice find. I'd love to find an older THICK pit like that, but unfortunately they never seem to pop up around here. Good luck on it man I'm sure it'll be a great cooker for you.

yeah you pretty much haft to check craigslist every day and be ready to jump on it , wish I would of picked up the other one for $100 too .

well the rain finally stopped long enough to get it painted and I will get it mostly done tomorrow if my tuning plates get cut .

the primmer and paint I used and the paint was a semi gloss but cost $3 more a can than the flat but I think I like it better .

had some left over gaskets for the smoker chamber from another cooker so I put that on and installed a better and bigger temp gauge .

gauge off the old Stump's is much bigger and better quality .

I have the exact same model and I need to do a good clean up like you have done. Please share the pics of the tuning plate(s).

I have built a new FB grate for mine, but that is about it, for now.

Am thinking of installing a small (pluggable) port on mine so I can Insert the probes of my Mav. remote thermometer. Also might do something different on top of the FB so I can preheat my splits.

But - in the meantime, I'm still working on finishing my trailer mounted BBQ grill...

got a fire / charcoal basket made tonight , I bought a sheet of expanded metal from Home Depot for $20 and it measures 12" X 12" X6" . the grate that was originally in there was in bad shape so this will do the same thing and keep the fire more contained in one spot .

yes and they are called NM/SE Gampak 1/2" connectors , also just drill a hole and buy a nut to screw on the back side . you might take a pic with a phone when you go in because there are so many different ones if you can not find them it might be easier to show the sales person but Home Depot has them in stock for $3

metal guy got my tuning plates cut today and got them home and I cut the angles of the inside barrel piece and I am ready to season it tomorrow so I cook on it this weekend .

plates are made out of 1/4" plate steel and are 13" X 6" on the flat pieces and 15" X 6" for the firebox piece .

I got rid of the stock deflector from the fire box and bolted a piece of angle iron in over the FB opening that the first tuning plate sits on.

Really nice job cleaning that bad boy up. Really nice.

I though about doing the same thing but I am going to try this first due to how I got that piece cut so good but what you did was my first idea and may go back to it if this does not work good .

getting the smoker seasoned up for this weekend tonight , got it sprayed down with oil and heated up to 275 degrees . I was amazed how quick this 1/4" thick cooker came up to temp in 20 minutes with just a little bit of wood and as you can see a nice clear blue smoke coming out of the stack . spatchcock chicken and rib pics coming this weekend .

first cooked and broke The Brinkmann in today , I used a mix of Hickory and Cherry for the smoke flavor and Mama Stump's Rub . cooked these at a temp from 225 to 250 degrees and was surprised how little bit of wood it used on a five hour cook and how easy it held temps and never had that with the cheep thin metal Brinkmann smokers . these were awesome ribs and poof they were gone !

it seemed to cook even but I have not put a meter to it yet to do a side to side comparison . I got to buy a big drill bit to put the probe hole in with the NM/SE connector I want to use and dang them bits are expensive at $45 so I haft to wait till this weekend to do a test but will post results .

got some more mods done today , bought a 1/2" Service entrance water tight cable connector to feed my probe wire through and some tires that will actually roll on gravel .

Gampak 1/2" SE Connector from Ace Hardware , locknut to hold connector , I bought a different grommet for the inside that had a smaller inside diameter and a 7/8" metal hole saw bit to cut the hole .

wheels that will actually roll , them metal ones suck . I also bought 5/8" round clamp nuts to secure the wheels since the plastic caps broke when I took them off .
