I was reading Hotch's post on "pig cakes" Link below. the other day, and my wife looks over my shoulder and says "that looks good you should make those. You know how much I like crab cakes" And then one thing leads to another. We were at the grocery store last night to pick up some pork among other things (it's 1.3 hrs to the store one way) Then I saw beef spares on a sweet deal so into the cart they went. Then I saw the sale on ground beef. So again into the cart. After that my wife says, "I could really use some pre-cooked chicken to make salads with. So, chicken breast into the cart. Finally, I get to the pork. Can't find the Boston butt I want (my regular meat supplier is 4.5 hrs away) But there was a three pack on little picnic's there so that will become the pig cakes. Anyway those are the events that bring us to today's cook.

Will be cooking on my 48" offset on a mix of hickory and mesquite. @ around 225*

I will post photos as the cook progresses.

the apples were holding my thermo probes while my pit was heating up. I just got lazy and didn't take them off

About 50 mi East of Visalia CA, And over 4000' higher in elevation. And my main meat supplier is all the way in San Jose.

Nope. Old school stick. With 2 stacks it can be used that way. But the stack closest to the FB is used mostly to spill off heat if needed.

All of the meat is off and the pit is cooling down. Here are some more pics. Wish I had full Boston butts, Ribs were on about 20min too long but flavor was spot on. Chicken came out great, Fatty exploded. But all in all I was happy at the end of the day. Thanks for looking.

Most of what was cooked today has been vac sealed for work night dinner and such. The ribs are gone and some of the pork has been set aside for "pig cakes" (thanks Hotch) the reason this whole cook got started in the first place.

If those aren't the prettiest beef ribs I've ever seen they are in the top two. Great job!

The pork made a great midnight snack.

Tostada with cheddar and parmesan cheeses, pulled pork, a little hot taco sauce.

Happy pregnant wife= happy life!

Josh I had about a quart of pull pork left and made a batch thinner at 1.5 oz each. So I will try these on my Blackstone tonight, at our pool party with friends, with the Philly Cheese Steaks.

With an 1.5 oz each and not 2.5 like the first run I made them thinner like a sausage patty for your in-laws.

Well, I was out of potatoes. But I found french fries in the freezer. So I cut them up and threw them in. I knew that sooner or later I would have to admit that.

PigCake Fail!

I left forgot the slaw at the store. Couldn't find small enough rolls. So I made the cakes bigger. And totally didn't plan ahead for the sauce. So basically I murdered the whole thing. But the taste of the final product was amazing. Thanks Hotch! Sorry for not representing well.

I would be all over those. :clap:

I think we will be cooking Pig Cakes at the Coop Fest come Labor Day weekend. It is a small gathering of a few of our Egghead friends.

I am going to try this around Thanksgiving with turkey, cornbread stuffing, gravy and a cranberry drizzle.

Thanks Hotch, I like the idea of trying some with turkey at thanksgiving. I do pulled pork a lot so we will be doing these again soon.
