A bone in Ribeye and a bone in NY Strip. Each about 1" thick and 1/2 tsp of kosher salt applied to each- both sides

After 1 hour rises and patted dry brushed with out and some fresh cracked pepper was added

I almost always use lump. This was my first attempt at Caveman Style. It was excellent. Almost no juice came out. Perfectly seared. You could here the meat and fat cooking

Yes sir, it is. Plain charcoal can cover the meat with ash. Lump reduces this dramatically. While you certainly can use either, lump is the clear winner for caveman style in my opinion.

Took more of a "I hope this works out so I don't get a load of sh**". But after reading a lot of post I felt I had a good chance to pull it off. Did not hurt that I was home alone either

I've been liking your style Big George! Keep it up! I've been intrigued to cook a steak like this since I saw this in college 5 years ago on alton brown's show. Been meaning to try it just haven't yet.

Nice job George. I admit, I am too scare to try caveman. As long as I can grill some great steaks, I don't see that changing...

There were hot coals throughout the grill I let the Egg run for about 2 hours first The Temp gauge was reading 600 degrees My son got home late after work and said they were "Perfect" He has never said that

I cook a lot over open wood fire and like to do the same style with wood.

It was something I wanted to try I got a Great sear and almost no juice came out of the meat when cut My son said it was perfect- 1st time ever Because lump has low ash I had no dust on the meat

It's always fun to try new things, but is there supposed to be some benefit to cooking this way? Just curious. Steaks do look good.
