We recently took a cruise to the Caribbean. We stopped at a lot of islands and one of them was St. Lucia. I saw some of the locals selling spices and Hot sauce so naturally I purchase some things. I bought a couple of small spice containers of "Bajan Jerk Seasoning". So last weekend I did some wings on the grill and decided to try the Jerk seasoning on a few wings.

SPICY, HOT!!!

I could not believe the level of heat and flavor from the dry spices. I've tried many Jerk marinades and this ranks near the top for heat.

Those look really good. I am still in search of a good jerk seasoning. What did you use and how did you like it.

You ain't kidding bud. It can get seriously smokin' hot. It's a sweat inducing heat because ya eat it up like crazy and then realize you're pouring sweat.

You make your own jerk marinade/paste, and smear it on, 24 hours in advance. Caribbeanpot.com, on YouTube, has a good recipe. I grow my own Scotch Bonnets.

I'll be smoking jerk-style spares this week.

I buy hot sauce and seasonings from every island that we visit.

Bajan refers to people or things from Barbados. Was it this brand?

Oh, hell yes! Your post encouraged me to thaw / re-grill some Jamaican Jerk wings on the gasser tonight.

Walkerswood Jamaican Jerk (Spicy... or Not-So) seasoning really is a good option if you don't have a wife/significant other who'll whip up some "real" Jerk seasoning that's not from a jar/bottle.
