Hello ...
I was wondering how long it would take to cook a 18 pound turkey and at what temp would be best? I'm not ready to attemp that yet ..just curious.. Diane :-))

At about 275, I would count on six hours at least. We are talking about smoking it right?

Cut the back out of the turkey and flatten out. I have found it to be a great way to get a more evenly cooked juice turkey. Plus it cooks alittle quicker. Dont for get to brine it.

Just like with chickens, it helps to speed up the cook and enable more even cooking. Give it a shot.

I'll have to try splitting one this year. However, last year I tried Poo's recipe, and they were amazing!
