I have been looking for fresh ham so I can try curing one. I can't find it anywhere, but a few places have decent looking fresh picnics. Would that be an ok substitute? Or should I see if a butcher can get the real thing?
Thanks!

It's up to you. I would ask around first but eventually probably get a picnic.

I've cured pork butts and shoulders with a ham recipe to make pulled ham sandwiches for a change from pulled pork.
I've even cured pork butts with a bacon recipe to make buckboard bacon.
A butt would be a great piece of meat to practice on, not too big and easy to handle during the curing process.
Fresh hams are common in most large grocery chains, and a local butcher can surely get one for you.

I take sliced Boston Butt (pork steaks) and brine/cure them.
Makes a great "hammy" meat that I call "Buckboard Ham" 8)

Pork Loin ... I particularly like the Rib End and the Sirloin. They can both be wet cured and roasted/smoked or dry cured and slow smoked for something close to rashers.
