currently smoking shortys and my smokers wanting to either go higher thani want or lower. im steady at 240 was shooting for 275 . I think im ok just take a bit longer but help is requested

I say let it run where it wants to up to 300* .

Leave it there, check for probe tenderness in 5-6 hours.

In my opinion @240F you need more than 7 hours without wrapping.
I speak for 4 bones not sliced.

well lads and lasses I have to do a painful thing. shorts have been on smoker at about 240 for 4 1/2 hrs and companys coming at 615ish. im gonna have to pull and put in oven at 300 to get done. I think they have absorbed plenty of smoke just want tender now. I have about a heavy hr to do it .
