Sous vide to the rescue. I cut the shoulder in half to make two 'steaks', added spices and a cube of butter, bagged'em and dunked them in a 175 degree water bath for about 3 hours whilst doing other chores around the house that the wife deemed necessary. I also stuffed some chiles with cheese and let them roast while starting the fire.
Here you can see how well cooked the 'steaks' came out of the water bath. In truth, they look dry for a few minutes, until they really started to sear, at which point they got nice and juicy looking.

And yes, they were quite moist and very flavorful.

I think these are just big ass Anaheims, with jack cheese and a pinch of salt.
