View Full Version : Impromptu experimental injected chicen 0n kettle (Live)

Had a nice roaster and wanted to do something a little different. Started raiding the fridge and pantry and ended up with this...

Made a marinade/injection form some soy, apple juice, a little ACV, a splash of lime juice, a dash of the very hot vinegar from my homemade pepper sauce and a sprinkle of Old Bay.

Put the bird on the kettle indirect with some apple wood chunks, liberally dusted with old bay and letting her rock at ~300...

About 45 min. in, flipped it breast side up, dusted the front good and gonna let her go for about an hour depending on smoker temp.

Flipped and checked temp... I.T. ~140 or so. Another 45 min or so I recon. Oh Forgot 2 shots of apple whiskey on the ingredients List for the marinade.

Gettin' close... up to about 150 I.T. I'm kinda paranoid with chicken. I like to see a solid 170... 165 if I'm gonna wrap and rest for a bit...

I love this. I used to stop on my way home from work in the wee hours on Fridays at a 24 hour Krogers and pick up marked down meat. I'd get up Saturday and look in my cupboard to see what I could use on what I bought. I'd then guess which method to use to cook it on my kettle. Everything was more than eatable, and I learned so much.
I've never used Old Bay by it's self. How did it work out?

Not quite done yet... I'll let ya know. I got the idea from doing boiled peanuts. Ran out of creole seasoning, had a can of Old Bay and sub'd it. Best peanuts I ever did... Got me thinking.

Final verdict... Success. Juicy, great flavor, tender. Old Bay is a keeper I think for poultry. Served with Mrs. Wookie's twice baked jalapeno potatoes, some fresh peas from the garden, rolls and of course a cold beer. (In this case the last of several different ones my Daughter had sent to me from CO.)
