First time smoking beef short ribs. Thinking salt, pepper, garlic powder. Planning on 5-6 hours at 250- 275. Does this seem right to you guys? Any suggestions?

last 2 times i did them it was 4 and 4.5 hours at 275...s&p...always turns out amazing

I say cook to probe tender. I tossed time and time out the window long ago. Well, except for poultry.

i agree and is how ive been cooking them...but it is nice to have a general window

sounds like a solid plan, just start checking for probe tender around the 4 hour mark and go from there.

Depends on how thick they are but that's pretty close

Beef ribs have a good amount of fat in them so I always trim off the extra. And there is a membrane on them like pork ribs so I take that off too. Some people don't. It's just a matter of preference.

After 2 hours and 45 minutes, I spritz with Apple Cider Vinegar and threw on some chicken wings.
