View Full Version : Pig up or Down??

Plan on doin a whole pig. question it should i put skin up or skin down? ive seen both ways done but not too sure on which to do so and if there are more benefits to doing it a certain way. help me out guys

It depends on which cooker I'm using. I leave it belly down on the horizontal wood burner through the whole cook.
Start it out belly down on the block pit, then flip it half way through for skin side down to finish.
Underground pigs go on their side.

Yea i'd say for a pit where it's roasted from bottom up I'd go skin side up...kinda same concept as spatchcocked chicken.

What are you going to cook on?
