I've got a friend who used to own five restaurants. Three BBQ, 1Mexican 1 everything else. While he never mentioned names he used to tell me stories of "customers". Oh my, I'm definitely not cut out for the restaurant business.

Grilled should have been "fire roasted". I'm fortunate enough to live close to New Mexico. When we are in Santa Fe and Albuquerque any grocery store will have a long aisle of Salsas and spices. Med Hot in New Mexican means your eyes, ears and forehead may sweat.
