View Full Version : First Try at adding Smoke to a High Heat Steak Cook.

This is a follow up to all the good info supplied from the thread linked below:

I was trying two new things at once on this cook. Using the A-MaZe-N Smoker 6" tube with pellets and reverse sear on smaller cuts of beef.

Broke out some SRF tenderloin medallions and bacon wrapped fillets for this experiment. Was going to do a ribeye for my Son but he canceled:

Went with some SM Peppered Cow and alittle K-salt:

Now here is where I screwed up. I laid the smoker tube full of Hickory pellets under the grills inbetween the flavorizer bars:

Turned on all burners to start the pellets. What a fantastic hickory smell! I turned off the center burner and added the meat. Then it happened. The pellets caught fire:

Too hot and close to the fire. I blew out the flames and closed the lid. It finally settled out but not much smoke now:

I let the IT on the biggest piece of meat hit 120*F and pulled all to rest for about 10 mins then increased heat to 550*F for the final sear. Here they are off after the finish:

They turned out Great although not much smoke flavor. Reverse sear worked really well to buy some time for the meat to get some smoke if I would not have screwed up the placement of the tube too close to the heat. Next time I'll place it on the top rack and assist with the lighting of the pellets if need be.

Hey they look great! Don't fuss over the smoke. I never make any attempt to smoke steaks myself...but if i did I'd cold smoke them for about an hour or so at ambient temp, rechil and cook like normal later.

As long as they tasted great, that's the important part.

I've been thinking about trying to smoke some steaks. I think I'm going to try a cold-smoke, then sous vide to rare/medium rare and then reverse sear to finish them off.

Hey isn't there a way for you to lite the pellets in the tube with a lighter to get them going? Then you can place the tube somewhere on a not hot part of the grill...

Here this guy does it with a torch.

Yep, that is the way to do it. Then place the tube on the grill away from the fire.
Blow the active flame out after a couple of minutes, and the pellets will generate smoke.

This would work. Also what Fwismoker suggested will work.
But Toast was looking for the FASTEST way to add some smoke to a specifically gas grill cook.

I need to clarify! Yes I'm lookin for the Lazy-ist way. Hell LuzziAnn has a hard enough time cleaning the grills and such. I'm always looking to help because that's the kind of Guy I am. :thumb:

Toast is looking for the fastest way, but he also thinks that it's dangerous to cold smoke the steaks.

Toast, it's simple.
1. move one of the grates out of the way and fire the end of the smoker tube up.
2. Once it's burning nicely, blow out the flame and set it down underneath the grates.
3. Move the grates back into normal position.
4. Take cold steaks out of fridge, season, put on grate above the smoker tube.
5. 1 hour or so later, move grate aside and move smoker tube to the very front.
6. Turn back burner on medium and slow cook steaks indirect to 120 degrees. ****
7. Turn other burners on, crank them up to high and reverse sear to get a crust. ****

**** Temp to cook to and how long to reverse sear are both dependent on thickness of the steaks. Thinner the steak, lower the initial temp and shorter the sear as it will cook quicker.



As I said in the other thread, the amount of smoke the meat will take on is dependent upon time. There's no escaping that. What you are trying to do is akin to hitting a brisket with smoke for 1 hour and then commenting on how it doesn't taste very smoky.

Buy a weber kettle and light some lump and bank it to one side. Put a chunk of wood on the fire and place the steak over the indirect side with the exhaust holes over the steak. Once the steak reaches 110F caveman sear it. Reverse sear and nice smoke flavor.
