Went to costco and picked up a 5lb rib eye roast. I rubbed it down with SPOG and threw it on the UDS.

I added a couple links of andouille to hold me over till dinner time.

I pulled it when it hit 130. It was a thing of beauty. Glistening in the sun.

i'm pretty new to this, just bought an insulated upright from lonestar. How long do you allow for something like this at 250 or 275? I understand its subjective, but i'm just trying to understand what the ballpark might look like.

I put it on at about 1 and pulled it off about 330-345. That was at 250
