I did a 4 lb shoulder which cooked for 6.5 hours which I ran out of charcoal around 5 hr. mark so I added more. I used 2x2 method on coals so I was wondering if 3x3 would be longer or just hotter. Just trying not to have to add during cook. Temps were around 230 with 2x2 consistently so I would not mind if it was a little hotter. The pork shoulder that I am doing is 8 lb that I got on sale for .79 a lb. Will be cooking this on Weber Master Touch 22.

I use 3X3 and get 300° give or take for 6+ hours easily, when I cooked at 250°-260° I could get 10-12.:thumb:

It seems 3x3 would burn hotter but not necessarily longer. I would try a 3x2 and make the snake longer. It all really comes down to rate of air flow to control how quickly that charcoal is igniting itself as it moves along the snake.

a 3x3 will just run hotter than a 2x2. The way to make it run longer is to make a longer snake.

If you want to cook hot and fast, and for 8 hours. Build a 2x2x1 snake about 90% around the charcoal grate. Light 12-15 coals and put them on one end. Keep the bottom and top vents wide open. You will run right at 325ish degrees for approx 8 hours depending on the wind. You can finish off a pork 8-10lb pork butt in about 6.5-7 hours.

Thanks everyone. I do use lower vent to control temp and top open so I will see how it goes.

About like Awaa says works well......a thicker pile, pinch down the vents a bit to get a little slower burn........

I mostly go by amount of fuel first, then available air......

another thing you can try is stack briquettes, wood & then add chips of lump to sweeten the pot a bit....

If you use more charcoal and choke the inlets it will last longer.

One important tip with the snake method is to make sure you start with more than enough lit coals. You can choke a fire fairly quick by cutting the intake, but starting out with the temp to low can take a while to recover from.
