I was reading about people brining chicken in buttermilk. I was going to cook chicken wings tomorrow night and was considering brining in buttermilk.

What does the buttermilk add that a basic salt/sugar/water brine doesn't add?

I add hot sauce to plain Buttermilk and let it soak no salt required it makes it super tender & moist

Gives it a little bit of a buttermilk flavor too, I'm usually too lazy to deal with it, but it's real good when I do.

Enzymes and acid in the milk acts as a tenderizer. I've used it for fried chicken but never grilled/smoked.
