I m going to the camper this weekend and doing a 10 # butt, butt do I use the kettle or the brinkmann offset?? What's the earliest I could rub it?

The kettle is easier to transport and with the correct charcoal setup you can do long cooks. You don't have to rub in advance. I rub as the cooker is coming up to temp. If they are both already there then go with the offset...you are camping might as well burn sticks.:mrgreen:

If you have to transport the cooker I would take the kettle. If both are already there then use whichever you are more comfortable with.

I prefer to rub a couple of hours before cooking to give the rub a chance to rehydrate.

Thanks for the help!!! Both are there. But I think I'm using the kettle. I have some 3/16 plate pieces for tuning plates that I want to install a d fab while the butt is cooking.

I usually rub the night before, so it's regularly 8 to 12 hours in the fridge with the rub. I don't think it really does a whole lot more for the flavor or anything, I just do it because I don't want to get up any earlier than I already have to to cook it.
