Pork Shoulder and 2 racks of ribs. 1 rack is wet brining with 1 gallon of water 3/4 a cup of kosher salt, all spice and bay leaves. This is how my Polish father in law does it and how the wife likes it. 1 rack is my choice. I just got money rub from BP smokers and am going to do that. Also I have never done the 321 method so I am going to try that with "my" ribs. I have my new bear claws and Redi Check all set. I will try to get some pics in the morning.

Up and got the fire running over an hour ago. Pork went on 30 minutes ago. Ribs are next!

I am using the redi chek for the first time. It is reading 290 in the middle of the rack. My 4" river country is reading 215 and a hanging thermo set on the rack int the middle is reading 225. Which one do I trust???

These thermometers are driving me crazy! The redi now says 298. I went down stairs to check it and the river country and the thermo on the rack both said 200!!! That is 100 degrees off! What is up with that?!?

Normally I would say the digital one is the most accurate. Make sure the probe end is not touching any metal anywhere. On my pit the grate temp on my Maverick is constantly at least 50 degrees hotter than the cheapo gauge screwed in the door. Put the portable one you have right next to the probe and see what they say.

Okay farkers. It was a heck of a day. Was up before dawn and started the fire and meat, did the dishes, made coffee,and then everyone woke up! Projects started happening and the smoke took the backseat. I was running all kinds of wire in the attic. Going to the store. Checking in on the meat. Etc. it was nuts. I think if the meat senses you are not paying attention it will not pay you! One rack of ribs was over cooked. The pulled pork was okay. Anyway, I think if I had paid more attention it might have been better. No one was disappointed but me and the meat!
