One of my favorite spring meals... venison, morels mushrooms and wild onions.
This year I was lucky enough to find a few morels.

dried most of them in the smokehouse...

marinated a few smaller ones...

butterflied a piece of whitetail backstrap saved from rifle season.. gave it a one hour quick cure with TQ.

gathered some wild onions...

sautéed the shrooms and onions in butter...

rinsed the backstrap and topped with the cooled shrooms and onions...

wrapped with a bacon weave to hold everything in place...

That's it! Another simple meal... it's one of my favorites.

Just joking. Haven't had much time to hunt the past few years but I've told myself that's going to change this fall come hell or high water! The Browning 25-06 is going to see some action again. :thumb:

I've never seen those shrooms till I saw em in one of your posts. The are definitely different and I bet they taste great. I'll have to hit up one of my friends in Ardmore to see if he has any on his property. Backstrap is always a favorite! Thanks for sharing.

Thanks Titch! Yes morels are mushrooms. The growing season is short so they are kind of hard to find at times.
The wild onions are nice, I look forward to them each spring. :thumb:

Great score on the morels this year! Looks like a bumper crop :thumb: I never have much luck with the morels, but my parents get enough wild onions to feed half the brethren.

Great ideas! I have those wild onions all over my neighborhood including my house. I honestly am afraid to eat anything growing from the soil in my neighborhood. I've picked a few onions and they smell good. It's cool to see someone cook with them! The grow like mad early spring.

Looks fantastic! Got some morels yesterday and hopefully more this weekend. Probably one of my top ten meals of all time is morels and deer tenderloin. What a match! Something close to this is for dinner tonight.

Thanks for the kind comments everybody! There's something about morels and wild game that just makes them taste so good together. One of my favorite meals!




Funny, we used to find morels all the time as kids. I always thought they were poisonous until a few years ago.....
Might have been "False Morels"? They look similar but are not edible.

That is the single greatest thing I have seen on this site. This is not hyperbole or blowing smoke in any way. That would be my final meal before going to the chair if I was in such a situation. Absolutely a complete honor to the bounty of the wild. Thank you for sharing!

Thank you Firecracker Jack! This backstrap didn't last long. lol I think I have more in the freezer. You need to try venison sometime, it's pretty tasty! :-D

It's one of my favorite springtime meals. Venison, morels and wild onions just seem to belong together. :-D
