Can anyone share a quality recipe using left over ham bone ?

Read a few about making a stock with it and using for beans and what not.

I love split pea soup. Its killer with a little smoke.

I hate ham, but wife makes split pea every year after Easter.
Not sure there is a recipe. Hambone, a few carrots, some onion and garlic, and one small potato.

This year I smoked pork butt. Not going to sacrifice that for soup until the kids get tired of it, which ain't likely.

I make ham and bean soup whenever I can get a ham bone. I slice off some of the remaining meat and set aside to add to the soup when done. Typically start with browning some bacon, then sweat some onions. Add the ham bone with some carrots and tomato paste. Cover with water. Salt and pepper to taste. Simmer for a few hours till everything is pretty much falling off the bone. Skim it a bit and remove anything undesired. Add beans and some vinegar. Sometimes some potatoes. Not really a recipe cause I change it every time.

We always do a split pea soup with ours as well. I love me a good split pea and ham soup!
