Well, the lady of the house is gone to decorate for her friend's baby shower. To celebrate my NOT HAVING TO BE THERE I shall make with fire, wood, steel, pork and beef!


The butts are done with Oakridge secret weapon and Simply Marvelous Sweet seduction. I haven't tried this particular combo, but it sounded good and tasted about right when I gave them the straight taste test.

The chuckies are done in my usual Oakridge Santa Maria and Black Ops combo.

The wood chunks laying there are peach and apple. There's a large piece of cherry already on and making happy smelling smoke.

Here's the WSM still waiting on sweet blue. I used mostly stubb's this time with some leftover royal oak lump in the bottom. The stubbs takes a little while longer to get to blue, but it's hard to beat the consistency.

And here's the snacks for the day. If you haven't tried these and like blue cheeses I HIGHLY recommend them!!! The big plus is it takes 31 of these flavor bombs to get to only 140 calories. That's like 6-8 trips to the kitchen for a small handful. Also known as 4-5 hours in my house.:-D

My only regret is that I didn't get a pic of my breakfast. Two thick sliced pork loin chops from the fatty blade end cooked in a cast iron pan nice and easy with secret weapon, butter and a little olive oil. So tender and awesome they didn't have a chance to be around long enough for a photo op.



If any of my fellow dieting brethren are wondering how this works out for the diet have no fear. This whole feast is to be put straight to the foodsaver and frozen except for one chuckie. I will be killed if she doesn't get her beef bbq fix! The breakfast is what I'll run on all day except for an energy boost before I get to the gym. I am REALLY enjoying this "farmer style" of eating as I can eat some really nice breakfasts and don't have the constant hunger all day to force me to falter in my diet quest.

I'm right there with you. Packed on some weight the last two years having a bit too much fun! Started on a new workout plan that's doing the trick. Plan is to drop 30, down 8 now. Definitely had to change my BBQ choices. Ribs have been replaced with lots of chicken and turkey. My homebrew has been replaced by light beer, red wine, or the occasional whiskey (for now!). As long as I can smell that smoke for a few hours, I'm content.

I hear ya!! It helps soooo much just to be able to cook with fire a few times a week! I've actually started taking requests from friends so long as they buy their own stuff.....although the fuel costs are getting a bit rough!


I've found that everybody has to find their weight loss "groove" as it pertains to their own body. Apparently as a BBQ man I'm very very lucky in that ultra high protein and fats actually works well for me. Others do horribly with that diet and need a well balanced intake and others do well getting away from certain proteins. I'm completely fine doing without breads and the like. The absence of all the gluten has had its plusses as well.


......except rice and taters. The rice and tater cutback is extremely hard for me. I literally have to keep them out of my house! Also, I am VERY fond of Jameson Irish whiskey and Carolans Irish Cream in my coffee. It was SHOCKING at how many calories were in what I considered a single serving. Around 520 calories with a shot of Torani syrup!!! And don't even get me started on my beloved Cheerwine and Sun-Drop sodas.....ugh!

Just cutting those liquids was seriously almost 2000 calories a day! Adding the treadmill and sauna every day along with the current "farmer's diet" has resulted in over 70lbs weight loss in a little over 9 weeks. I have 45 more to go before my wedding in October and I rock the hell outta that tux!!:laugh:

Looks like you're day is coming together quite nicely!

As far as the diet plan goes, just make sure you're getting the necessary nutrients, however you do that!

Oh dang! Sorry for leaving out some important details. I forgot to mention that I take multivitamins to keep everything on an even keel and make SURE I get enough magnesium. I never thought I'd be a guy that flew the flag for any particular mineral or vitamin, but I'll wave magnesium's flag all day! I had always taken vitamins when I'm cutting back, but would always feel a little off. Be it nerve problems or just general malaise I couldn't figure it out till a friend told me I probably wasn't getting enough magnesium. BOOM! Problem solved!

OK, here's a couple shots of the meats. She's rolling along around 275-280 up top therefor probably running about 250-255 on the lower rack. This is about 3.5 hours in and I'm guessing the chucks are in the 160's. I'm not wrapping anything.

The chucks are done and vacuum sealed. The edges always try to get dry on these thinner ones, but the vacuum sealing while they rest perks them right up. So when you reheat them in the bag it's all good.:grin: The color is a deep mahogany that most like, but I'm partial to the bright colors they were at the 4 hour mark. But, that's the price for going sans foil or butcher paper. I've never like foil during a cook. It might be me being a loon, but I swear it gives things that are smoked an off taste.

Now I've switched the butts to the top rack so they can enjoy the higher temps. Also, threw in another lit chunk of apple wood. Since they were in the lower temps earlier I'd say they have another 4 hours possibly unless I raise the temps some past the 275 that they are at.

Great looking chucks... I have a little over 2 weeks before the wife leaves for an extended vacation. I can see me spending several of the same sort of days then...

Well the cook is over as well as the rest. She's home too, but was too tired and needed to get to bed as she had to go right back to where she was today for the actual shower.



Soooo, here are the finished pics. I wasn't supposed to eat any, but DANG if Secret weapon and sweet seduction together aren't good! I forgot to mention that my container of Simply marvelous is spiked with fresh ground cinnamon. I REALLY like cinnamon in my sweet pork rubs.

Apologies to everyone that doesn't like fat. I scored the fat cap so it would render but stay holding that epic combo of smoke, pork fat and rub melded together in that magical pseudo pork belly way. This cook was for us in coming meals and we prefer the fat mixed into our pulled. If it's for someone else I almost always trim down to maximize bark and minimize visible fat.

There's nothing wrong with fat Chris. As I have mentioned, I don't de-fat my butt juices before I pour them back in with the pulled pork. To me, that's a lot of flavor you are throwing away...

YEP! There's nothing I like more than a bbq sammich piled high with pieces of bark sprinkled in and a couple flavor bombs of fat thrown in for good measure! Topped with slaw of course.

On a side note I am glad this was put into foodsaver bags. Because I just realized I am completely out of Blues Hog Tennessee Red!!!!:shocked::shocked::shocked:

Now that won't bother the lady of the house as she despises the smell and flavor of vinegar......which is why I'm banned from making my own Carolina vinegar sauce in the house from now to eternity.:heh::heh:
