Made some BBQ chicken thighs last night with a mango mustard BBQ sauce.

The sauce goes well with pork chops cooked over charcoal as well, but I used it as a glaze for the thighs.

The sauce:

Served these with roasted cabbage steaks and mushroom rice pilaf.

OK, here's the recipe for the sauce.

Mango Mustard BBQ Sauce/Glaze

1 cup yellow mustard (predominant flavour, so you could go with 3/4 cup)
1 cup cider vinegar
1/2 honey
1 tbsp Worcestershire sauce
1 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp cumin
1/2 tsp catenne (want some heat, add more)
1/2 tsp salt
1/2 tsp ground black pepper
1 14/16oz (400-450g) package frozen mango chunks, thawed

Combine all ingredients in a medium saucepan, bring to a slow simmer over medium heat and cook for 30 minutes stirring frequently.

Puree with an immersion stick blender until smooth.

Will keep refrigerated for 2 weeks or freeze for future use.

No, but they're dead easy. Heat your oven to 400. Cut a whole cabbage into slices about 1" thick. (Hold the cabbage with the core 90 to the cutting surface) Throw them on a cookie sheet, rub each side with olive oil and season with S&P. Bake for 1 hour turning over halfway through.
