Phubar's Berībēkon Umami Pron

[Phubar]

-starter porkbelly ramen

-main coarse umami porkbelly with Japanese rice and paksoi


Basically I made the same dish as the burisuketto umami (http://www.bbq-brethren.com/forum/showthread.php?t=203848) .

Dashi was made out of bonito Phlakes,dried seaweed and dried shiitakes.
Made a smoked porkbelly bouillon for the Japanese rice to cook in...the remains were mixed with the dashi for a sauce to pour over the rice.

Piece of porkbelly for the ramen was marinated in soy,honey,salt,pepper...smoked and grilled.
